Pink Pickled Eggs

It's pink Saturday again, we thought for today it would be nice to theme our posts about Easter and mine is about eggs, PINK EGGS! Pink and yellow! Pickled eggs aren't really pickled just kind of sweet and tangy.
Here's the recipe:
6 hard boiled eggs-peeled
1 cup cider vinegar
1 can whole beets with the liquid
1/3 cup granulated sugar
1/2 tsp salt
1 small onion-chopped (approx 1/4 cup)
4 whole cloves
shredded lettuce or greens
Place peeled eggs in a bowl or jar
Mix vinegar; beet liquid; sugar; salt; onion and cloves
Pour over eggs, add beets, cover and refrigerate 2-3 days
Slice eggs and beets, serve on a bed of lettuce or greens

  2. Pretty but you can have em all as I don't like em. I have a jar here and meant to ask you if you wanted them and I forgot. They were left on my porch alson with a dozen eggs by someone that David knows who has chickens.

  3. Wow, I'm impressed. These are nearly day-glo - my husband will definitley be having a go at this recipe. He loves beetroot, he loves eggs, so this is going to be heaven for him.

  4. Wow...that is surprisingly pretty and tasty looking!! I can't stand hard boiled eggs...that's why i say that! What a great idea and I really like the look of them paired with the beets and sitting on a bed of lettuce....very pretty!! Happy Easter!

    Love the pickled eggs..I can only eat one,but I like them..and I love the little bear down below. I've alwys thought the felted things were so pretty,but I've never known how to do them. Little bear is adorable. Happy Pink Saturday..ahd have a wonderful weekend..Have a blesed Easter..
